Delicious Vegetable Pilau/pilaf

Vegetable Pilau or pilaf, is what’s happening today ? Just got back from a holiday and the first thing I had to have was rice & spice! #life This pot of fluffy spiced rice & veg took about 20 minutes to make and you wont have any regrets trying this recipe! I promise!! ? .


This is how you make it:.
☆ Wash 2 cups of basmati white rice and set aside.
☆ Heat up 3tbsp ghee in a pot (with lid).
☆ Add 1 large chopped red onion and let this fry for a minute.
☆ Then add 1 cinnamon stick, 4 cloves, 4 green cardamom pods, 2 star anise and 3 bay leaves. (Remember to remove them before serving).
☆ Add 1tsp garlic paste & 1tsp ginger paste. Fry for a few seconds.
☆ Then add 1tsp cumin powder, 1tsp coriander powder, 1tsp chilli powder, 1/2tsp turmeric powder and 1/2tsp black pepper powder. REDUCE all spices to 1/2 measurements if you like it mild. Leave out the chilli powder if you don’t like it hot.
☆ Add 1 1/2 cups frozen veg, 2 cups washed white basmati rice, 50g raisin and stir on high heat for 1 minute.
☆ Then add 3 1/2 cups of vegetable stock let it come to a boil on high heat. Taste for salt. Stir well. Reduce the heat immediately to the lowest setting, cover with lid and let it cook for 10minutes. Turn off, and let it cool down for another 5 minutes before you open the lid.

☆ Top with roasted almond flakes and fresh coriander leaves. Squeeze of lemon too.

Best served with some raita or achar. But it pretty much goes with anything. Let me know if you have any questions.
